Geburtstagskuchen / Birthday cake

It's been a while since I wrote something here. I didn't make any bentos for a long while either. The company I work for moved at the beginning of 2012. Now my daily commute is one hour longer. And I started going to the gym last year. So my day is another hour longer for some days of the week. To have at least a little bit of free time I stopped making bentos. I miss it, but I don't want my day to be just work, eat, sleep and a bit of sport.

It's that time of the year again, my birthday. I have to bring a cake to work. The days before I was already looking through interesting blogs, looking for cake recipes. I decided to make the Apple pie with white chocolate by Fräulein Klein. Making apple pie isn't that complicated and the chocolate sounds yummy. So I bought all the missing ingredients and blocked the kitchen on the evening before my birthday. It's been a while, since I last baked something. And because this would be a good opportunity to blog again, I made photos. I decided to blog in German and English, because I'm a lot faster writing my thoughts down in German. And then I translate it to Englisch. I still need to practice,

Zutaten / Ingridients
100 g weiße Schokolade
250 g Butter
120 g Zucker
4 Eier
Mark von 1 Vanilleschote
220 g Mehl
100 g gemahlene Mandeln
1 TL Backpulver
1/2 TL gemahlener Kardamom
1 TL Zimt
3 EL Milch
2-3 mittegroße - große Äpfel
Puderzucker

100 g white chocolate
250 g butter
120 g sugar
4 eggs
pulp of 1 vanilla bean
220 g flour
100 g ground almonds
1 tsp baking powder
1/2 tsp ground cardamom
1 tsp cinnamon
3 tbsp milk
2-3 medium-sized or big apples
icing sugar

While I was gathering the ingredients, I was remindet that we got rid of a lot of the 'sweet' spices a while ago. Most of them were way too old. And so far we didn't by much to fill up the stash. So there wont be cardamom or cinnamon in my cake. But I'm sure it will be ok like this.
"Schokolade im Wasserbad schmelzen. / Melt the chocolate over a hot water bath."

Uh, this is the first time, I'm doing this. But as long as the bowl doesn't turn over (right word?) and doesn't touch the pot, everything should be all right, shouldn't it? I used my selfmade wooden spoons to hold in in position. After the water boiled over once (yay for induction cookers), the chocolate was slowly melting.
"Butter mit Zucker schaumig schlagen. / Beat butter with sugar until fluffy"

I put the butter in top of the pot with the chocolate to make it a bit soft. Then I weighed the sugar and put both in the mixing bowl. At first the butter was constantly drawn into the beaters. So I had to scrape it out a couple of times. But eventually everything became a soft mixture.
Add the eggs with th pulp of the vanilla bean and keep stirring"
Alles weiter vermixen.

And again something new. How do you scrape a vanilla bean? I think I did quite well for my first time. Vanilla pulp tastes weird. Was the bean already too old? I bought a new one, but I don't know if I took it, because there were three in my cupboard. Well, it will be ok. Just keep stirring.
Mix in the chocolate. After that flour and baking powder"

Getting the chocolate out of the bowl takes a while... But eventually it was done and I could lick the rest off the spoon. Mhm, melted chocolate :3 Weigh flour and almonds and add the baking powder. A bit more than the recipe says, because "best before" was quite some time ago. But something loke this can't get go bad.
I only used half of the almond package. I think I have to bake another cake soon.
"Gewürze und Milch ebenfalls unterrühren. / Add spices and milk"

Or, well, just the milk. A bit more of stirring and than I tried the taste. Yes, tastes good. I just can't taste the chocolate.
Grease a springform pan (7.5 - 9.5 inch), fill in the dough and flatten"
Zum Einfetten muss das Butterpapier herhalten. Muss da nicht eigentlich noch Grieß oder Paniermehl oder sowas dran? Grieß ist keiner da (argh), also etwas Paniermehl. Ich hoffe, das ist ok ^^;
Mein Handy sagt nun erstmal "zu wenig Akku fürs Fotolicht". Ok, also aufladen. Kann ich nebenbei ja schon mal aufräumen. Und die Vanilleschote in Zucker legen.

I used the wrapping of the butter to grease the pan. Doesn't it need semolina or breadcrumbs or something like that? I didn't have any semolina (argh), so I used a bit of breadcrumbs. I hope this is ok ^^;
My smartphone said "not enough battery to use flash light". Ok, so I'll let it charge. In the meantime I can clean up a bit. And put the rest of the vanilla bean into sugar.
Peel the apples, divide it into eight pieces and cover the dough with it. Press gently into the dough"
^^; Man sollte halt immer richtig scharfe Messer benutzen.

And don't cut your finger... ^^; You should only use sharp knifes. At least the cut wasn't deep, It was red, but the blood didn't come out of the wound. Doing something without the ring finger can be quite difficult.
One ring of apples on the outside. And one smaller on the inside. The first pieces already began to turn brown. So quick, in the oven.
"Bei 180 Grad ca. 50-55 min. backen. / Bake at 180° C (350 ° F) for about 50-55 minutes"
Aaaah, was jetzt? Erstmal Hitze runter. Also nochmal 10 Minuten.

After 30 minutes I went into the kitchen to take a picture. Oh no, why is the cake already so dark? Skewer test at outside: ok. Can it be, is the cake already done? Skewer test in the middle: still almost raw. Aaah, what to do? Less heat. Cover in aluminium foil. Research on the internet. Lowering the heat is bad, it will just dry out the cake. So I put the heat back, tightened (?) the foil and waited the remaining 20 minutes. Skewer test, not much better. So I waited another 10 minutes. And another 10 minutes. The middle is still moist. Maybe the apples lie to close together. But it can't stay in the oven any longer. It already is much too dark. And I should have been in bed for a while.

The next day at work. It's nice to be the first, who arrives. So I had enough time to cover the cake with powdered sugar an to take photos. After I cut the first pieces, I looked, how the cake turned out at the inside. Is it good or soggy? You can't see it well on the picture, but it was as it should be. Just in the middle, right beneath the apples, it was a bit soggy. But everyone liked it. My boss contributed some canned whipped cream. At lunchtime, almost everything was already gone. As I went home, there was one piece left, which I took with me for me and my boyfriend.

I really liked this cake. I'll definitely make it again. But maybe with some more chocolate, because you couldn't taste anything of it. And needless to say, with less heat.
